Fabulous, delicious and a little bit different. Hopefully you will agree that prawns and mango work together brilliantly.  Serves 4.

 

Grilled prawns with herbs and a mango salad

Ingredients

  • 20 cooked tiger prawns
  • 8-12 small broccoli florets, steamed and cooled
  • 1 medium mango, peeled and cut into strips
  • 1 red pepper, cut into thin strips
  • 1 small red onion, peeled and finely sliced
  • 1 large handful fresh mint, leaves stripped
  • 1 large handful fresh coriander / cilantro, chopped

For the dressing:

  • 1 garlic clove, peeled and finely chopped
  • 1 fresh red chilli, finely chopped
  • 3 tbsp Thai fish sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp molasses

Method

Whisk all the dressing ingredients together, or whizz in a blender.

Combine the remaining ingredients in a bowl, toss together with the dressing and serve.
