A delicious healthier chocolate cake!


100g dark chocolate 70% cocoa or more

80g of coconut oil

100g of ground almonds

2 eggs

Maple syrup, or honey, or coconut sugar  (enough just to sweeten) approx 3 TBS

½ tsp. gluten free baking powder.

50 grams mixed chopped nuts (optional)


Place the chocolate and coconut oil in a bowl over a pan of simmering water and melt together gently till liquid and combined.

Mix together the eggs, ground almond and ample syrup and beat well together with a whisk.  Add the liquid chocolate mixture and combine using a spatula or whisk.
