Perfect on a hot summer day.  A healthy variation on the more traditional ice cream recipes.  It only takes a couple of minutes to make before you pop it in the freezer to set.

Almond ice cream with almonds


  • 1 pint of soya milk
  • 2 cups of ground almonds
  • A few drops of vanilla essence
  • 4 oz of xylitol


Whizz up together and freeze in a shallow container.  Easy!
