Perfect with sliced fresh vegetables or some healthy crackers. Ideal as a mid-morning or afternoon snack and a lot more healthy than a biscuit!

Red pepper and walnut dip

Ingredients

  • Pinch of paprika
  • 1 clove garlic, crushed
  • 100g chopped walnuts
  • 225g roasted red peppers
  • 2 cherry tomatoes chopped
  • 3 tbsp walnut oil
  • 1-2 tbsp balsamic vinegar
  • 2 tsp honey (if desired)

Method

Place paprika, garlic, walnuts, skinned peppers in a food processor or blender- blend until finely chopped. Add rest of ingredients and blend until smooth. Adjust vinegar and honey to your taste. Season with a little black pepper and sea salt.
