This apple, carrot & fennel coleslaw can be enjoyed as a healthy lunch or as an accompaniment to a fish or chicken dish.

Ingredients for fennel and apple coulslaw


For Coleslaw:

  • 1 fennel bulb, 2 apples, 2 carrots, 1 small red onion (finely chopped)
  • 2tsp fresh thyme, chopped

For Dressing:

  • 2 tbsp lemon juice and 1 tsp lemon zest
  • 4 tbsp flaxseed oil
  • Handful fresh mint leaves, chopped
  • Freshly ground black pepper


Using a food processor slicing attachment, mandolin or sharp knife cut fennel, apple and carrot into thin julienne. Place in a large bowl and add onion and thyme.

Whisk all dressing ingredients together in a bowl, whisk and toss salad in it. Season with black pepper to taste.
