Prepare in just 5 minutes.  Recipe serves 4, so please simply adjust ingredient quantities to suit.

Cashew and broccoli soup with bread


  • 1 litre vegetable stock (boullion)
  • 2 cloves garlic, crushed
  • 1 cm fresh root ginger, peeled and grated
  • 60g cashew nuts
  • 1 tsp thai fish sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp tamari
  • 500g broccoli, cut small bits
  • 1 tbsp olive oil


Put stock, ginger, garlic, ginger, cashew nuts, fish sauce, vinegar and tamari into large pan and bring to boil. Add broccoli and simmer for 2 mins.

Process soup in blender until thick and smooth. Add the oil and process again to combine. Season with lemon juice and black pepper.
