Serve with one of our delicious, healthy cracker recipes. Ideal as a light lunch or as a starter at dinner.

Bowl of fresh gazpacho soup


  • 1 green pepper (de-seeded)
  • 1 red pepper (de-seeded)
  • 1 cucumber
  • 2 cloves garlic
  • Small bunch parsley
  • 2 tbs red wine vinegar
  • Drizzle of olive oil
  • 2 punnets or two large double handfuls of sweet best quality cherry tomatoes
  • 4 spring onions


Blend everything in a liquidizer till chunky soup forms. Add more cherry tomatoes if too thick.

Serve with chopped parsley and spring onion.
