Delicious and creative recipe idea dreamed up by in:spa nutritionist Alli Godbold. Serves 4.


Broccoli prepared to be cooked


  • 4 organic/free range chicken breasts
  • Tender-stem broccoli

The Dressing:

  • Juice and zest of a lemon
  • 4 tbsp olive oil
  • Freshly ground black pepper
  • 250g tenderstem broccoli, trimmed
  • ½ red onion, finely chopped
  • Handful of mange tout
  • 2 carrots, cut into julienne
  • 1 tbsp sesame seeds
  • Trickle of sesame oil


Bring a large pan of water to the boil. Add chicken and cook 10 minutes. Turn off heat and leave chicken in to poach for further 15 minutes. Remove from pan and shred meat, discarding the skin.

Mix dressing ingredients and set aside.

Steam broccoli then place in a bowl with the chicken and all the 8 other ingredients. Pour over dressing and mix well. Sprinkle with seeds and sesame oil.
